Beef short ribs are an old fashioned cut that has grown in popularity over the past few years as many chefs feature them on their menu. They are cut from the rib of the forequarter (or the ladder, as many butchers refer to it as) of the cow. They consist of a small piece of the rib bone which is overlain by delicious meat. Beef short ribs are great slow cooked so the meat falls off the bone or alternatively can be marinated for the BBQ.
