Feather steaks used to be known as part of the chuck steak but modern-day seam butchery has separated this cut from the chuck to make an incredibly tasty frying steak made popular today by many well-known chefs. The Flat Iron steak is created by removing the gristle that runs through this cut to give a solid marbled steak. Cook for 4-5 minutes each side for medium-rare
