This is a prime cut of lamb, with a whole rack traditionally consisting of 6-7 ribs. Packed full of flavour, it is one of the more expensive cuts of lamb, but will perhaps be the most well received for a special treat. Traditionally coated with a crumb crust and cooked until pink or medium at most to preserve the flavour.
