An old fashioned cut that has come back into fashion!  Feather steaks used to be known as part of the chuck steak but modern day seam butchery has separated the feather from the chuck to make an incredibly tasty piece of braising steak made popular today by many well known chefs.  The seam running through this cut which looks like grissle is actually collagen which when cooked breaks down to make wonderful gravy.
