Cumin 2 tsps.
Fresh Ginger 1-inch cube, grated
4 cloves sliced Garlic
1/2 tsp of ground Black pepper
Slice and dice 1 medium Onion
1 cup unsweetened Coconut milk
Ghee or butter 1 tbsp
Here is how to make this Oxtail curry recipe:
In a frying pan, cook the oxtail to seal the meat, using a little of the ghee, set meat aside. Place the garlic cloves and the onion in and cook until the onions turn translucent. In a separate oven-safe dish, put the cumin, ginger, garlic, pepper, and onion in with the rest of the ghee. Stir to combine ingredients. Add the oxtail, spoon over the mixture to coat the oxtail. Add the coconut milk. Either simmer over low heat on the stovetop or place in the oven at Gas mark 2 or 150C. Cook for 4 hours stirring occasionally. Top up with water or coconut milk if required. In the last 1/2 hour, take the lid off and let the sauce reduce. The meat should be falling off the bone, stir this in and remove any bare bones.
This oxtail curry serves 2 persons. You can serve it with either rice or grated cauliflower.
